2x1 Rib Knit

A rib knit alternating two columns of knit stitches with one of purl, producing vertical ridges with a wider face rib than a 1x1. The alternation gives the fabric strong crosswise stretch and recovery, so it pulls back to shape after being stretched — which is why ribbing is used at collars, cuffs and waistbands, the places a garment has to stretch to go on and then stay put.
Knit and purl in columns
A rib knit alternates columns of knit stitches, which sit forward, with columns of purl stitches, which sit back. The alternation folds the fabric into vertical ridges.
In a 1x1 rib the alternation is one and one. In a 2x1 it is two knit columns to one purl, which makes a wider, flatter face rib and a slightly less pronounced corrugation.
Both look similar at a glance. The difference shows in how much the fabric pulls in and how much it stretches.
Why ribbing recovers
The ridges mean the fabric is already folded. Stretching it crosswise partly unfolds it, and the yarn's own elasticity pulls it back — so ribbing stretches a long way and returns.
That recovery is why collars and cuffs are ribbed. A collar has to open enough for a head and then close again, which a plain jersey cannot do.
It also pulls the fabric in widthwise, which is why a ribbed waistband sits tighter than the body it is attached to.
1x1 against 2x1
1x1 stretches more and pulls in harder. It is the usual choice for a tight cuff or a snug collar.
2x1 is flatter and less elastic, which suits a wider collar band or a rib that is meant to lie rather than grip.
On a garment spec, the difference tells you how the trim will behave rather than anything about the body fabric.
